A lightweight spun iron wok that’s perfect for high-heat stir-frying, with a flat base for induction-compatibility and stay-cool wooden handle. —DETAILS— Due to their unique spun iron construction, Netherton Foundry pans have all the advantages of cast iron cookware with half the weight. This wok is the thinnest item in the range, which makes it exceptionally heat responsive—meaning you can achieve that slightly smoky flavour and crisp texture Cantonese chefs call ‘wok hei’. It can withstand the heat of a burner set to maximum without warping, as long as you make sure to start with low heat and gradually build up to high to avoid thermal shock, which is also caused by adding cold water to a hot, empty pan. The comfortable, hand-turned oak handle is easy to grip as you shake the pan, and unlike standard carbon steel woks, there’s no need to season before use. Like other Netherton Foundry pans, this wok comes pre-seasoned with flax oil and becomes more non-stick over time as long as you maintain it properly.
